Palmiers: Master Lai, skilled in creative enhancements and blending Eastern and Western ingredients, has meticulously crafted these pastries using natural butter for a rich, smooth texture. Combining various fresh ingredients with expertly made pastry, he has created the Michelin-quality puff pastries. The diverse flavors offer delightful surprises, and Master Lai has also refined the method and size of the pastries to highlight their crispness.

Crispy Cookies: Combining the crispness of traditional Chinese peach crisps with the rich buttery flavor of Western cookies, these crispy cookies are created through unique baking techniques that bring together the qualities of "flaky, fragrant, tender, and crispy."

Tonggwoji: Originating from the Tang Dynasty, Tonggwoji is a traditional specialty pastry. During the prosperous Tang era, a variety of exquisitely shaped and vibrantly colored snacks became popular among the royal court and aristocrats, known as "Tonggwoji". Imperial Patisserie pastry masters Yip Wing Wah and Lai Wing Koon have repeatedly researched ancient recipes, incorporating modern ingredients such as natural butter, eggs, flour, and lotus seeds. With intricate processes, they prepare a secret filling. Each Tonggwoji is handmade with a carefully crafted outer layer, baked slowly to showcase exquisite craftsmanship.
